Werrington Chicken Sandwiches
For many years I have enjoyed organising the ‘Chicken and Champs’ stall at the Loreto Kirribilli Spring Fair. So, I thought it fairly appropriate to share this recipe with all Werrington Homestead guests. I am so often asked what my secret ingredient is…. and although I am not a celery lover it does make the filling ‘pop’. Must be accompanied by a glass or two of bubbles from the sunset viewing deck overlooking the vineyards! Make double quantity too! Trust me.. you cannot stop eating them! Match the sandwiches with a sparkling from our local vineyard – Moppity Wines.

Ingredients
- 1kg chicken breast fillets
- 1-2 bay leaves
- 500ml chicken stock
- 1½ cups finely chopped celery
- 6 tablespoons chopped chives
- ¾ cup chopped shallots
- 1½ cups whole egg mayonnaise
- Salt and pepper to taste
Method
- Place chicken in a saucepan, add the bay leaves and cover with stock. Bring to the boil then reduce heat and gently simmer 5-7 minutes.
- Turn off the heat and allow to cool.
- Roughly chop chicken and place in a bowl with celery, chives, shallots and mayonnaise. Mix well. Season with salt and pepper.
- Use as a sandwich filling.
Note: This recipe is sufficient to make sandwiches using two loaves of bread. The amounts can be played with according to taste.
