Grilled Eggplant

This dish is so easy to make and so delicious. Perfect served with fresh sourdough or a perfect addition to a cheese board selection or served on its own.

Ingredients

Method

  1. Slice eggplant 1cm thick.
  2. Grill eggplant until golden brown in sandwich press with generous amount of good quality olive oil.
  3. In a bowl, combine garlic, oregano, parsley, olive oil and lemon juice.
  4. Assemble eggplant on serving dish and drizzle with dressing. Use salt and pepper to taste.
