Grilled Eggplant
This dish is so easy to make and so delicious. Perfect served with fresh sourdough or a perfect addition to a cheese board selection or served on its own.

Ingredients
- 2 eggplants
- 2-3 cloves of garlic crushed (depending on love of garlic)
- 1 handful of oregano
- 1 handful of parsley
- The juice from 1 lemon
- 3 tbsp of good quality olive oil to taste
- Salt and pepper to taste
- Extra oil for grilling eggplant
Method
- Slice eggplant 1cm thick.
- Grill eggplant until golden brown in sandwich press with generous amount of good quality olive oil.
- In a bowl, combine garlic, oregano, parsley, olive oil and lemon juice.
- Assemble eggplant on serving dish and drizzle with dressing. Use salt and pepper to taste.
