What are weekends away with family and friends without a friendly game of tennis? Werrington Homestead has recently installed a championship sized tennis court surfaced with the same concrete surfacing as the US Open tennis courts. With big, bright night lights, the court all night long. Just don’t disturb the local wildlife with “McEnroe style” tantrums! Please bring your own tennis racquets. We do provide a bag of tennis balls for your use during your stay but you may prefer to bring your own.

There’s also a practice wall to warm-up on before your match. But if tennis is not your thing there’s a basketball hoop for shoot-outs.

And if none of the above suits… hit the sunset viewing deck with an icy cold beer in Summer or a big glass of rich red vino in winter.

Werrington Chicken Sandwiches

For many years I have enjoyed organising the ‘Chicken and Champs’ stall at the Loreto Kirribilli Spring Fair. So, I thought it fairly appropriate to share this recipe with all Werrington Homestead guests. I am so often asked what my secret ingredient is…. and although I am not a celery lover it does make the filling ‘pop’. Must be accompanied by a glass or two of bubbles from the sunset viewing deck overlooking the vineyards! Make double quantity too! Trust me.. you cannot stop eating them! Match the sandwiches with a sparkling from our local vineyard – Moppity Wines.

Ingredients

1kg chicken breast fillets
1-2 bay leaves
500ml chicken stock
1½ cups finely chopped celery
6 tablespoons chopped chives
¾ cup chopped shallots
1½ cups whole egg mayonnaise
Salt and pepper to taste

Method

Place chicken in a saucepan, add the bay leaves and cover with stock. Bring to the boil then reduce heat and gently simmer 5-7 minutes.
Turn off the heat and allow to cool.
Roughly chop chicken and place in a bowl with celery, chives, shallots and mayonnaise. Mix well. Season with salt and pepper.
Use as a sandwich filling.

Note: This recipe is sufficient to make sandwiches using two loaves of bread. The amounts can be played with according to taste.

Olive Picking at Werrington

We had a beautiful weekend introducing our friends to Werrington Homestead and picking our first crop of olives in late May this year. After collecting buckets upon buckets of olives, we had a rather long lunch underneath the vines with tables laden with delicious home cooked country dishes and a few bottles of matching wines! And may I say, the oil these olives have produced is so beautiful … never have I tasted olive oil so fresh and so green in colour. Delicious served with sourdough and freshly picked herbs.

Grilled Eggplant

Grilled Eggplant

This dish is so easy to make and so delicious. Perfect served with fresh sourdough or a perfect addition to a cheese board selection or served on its own.

Ingredients

2 eggplants
2-3 cloves of garlic crushed (depending on love of garlic)
1 handful of oregano
1 handful of parsley
The juice from 1 lemon
3 tbsp of good quality olive oil to taste
Salt and pepper to taste
Extra oil for grilling eggplant

Method

Slice eggplant 1cm thick.
Grill eggplant until golden brown in sandwich press with generous amount of good quality olive oil.
In a bowl, combine garlic, oregano, parsley, olive oil and lemon juice.
Assemble eggplant on serving dish and drizzle with dressing. Use salt and pepper to taste.
